Zucchini Biscuits (Parmesan Herb)

Delightful blend of cheesy and herbaceous flavors with these Zucchini Biscuits, perfect as a snack or side dish.

  • 1 and 1/4 cups shredded zucchini
  • 1 teaspoon salt, divided
  • 2 and 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup unsalted butter, cold & cubed
  • 2 Tablespoons chopped fresh basil
  • 1 Tablespoon chopped fresh parsley
  • 1 cup buttermilk, cold (optional)
  • Flaky sea salt for topping

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare baking sheets by lining them with parchment paper.
  2. Combine the shredded zucchini with 1/2 teaspoon of salt. Allow it to sit for about 10 minutes, then drain the excess moisture with paper towels.
  3. In a large mixing bowl, whisk together the flour, the remaining salt, baking powder, baking soda, garlic powder, and black pepper until well combined.
  4. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Fold in the drained zucchini, chopped basil, and parsley until everything is just combined. Avoid overmixing.
  6. If using buttermilk, gradually add it to the mixture, stirring until the dough holds together.
  7. Shape the dough into balls and place them on the prepared baking sheets, leaving some space between each biscuit.
  8. Sprinkle the tops lightly with flaky sea salt for added flavor.
  9. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
  10. Allow them to cool slightly on the baking sheet before transferring them to a wire rack. Serve warm or at room temperature.

Notes

Store leftover biscuits in an airtight container for up to 2 days or in the refrigerator for up to a week. Can be frozen for up to 2 months.
