  • 1 cup (8 oz) cream cheese, softened to room temperature
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. Rinse and chop the strawberries, placing them on a paper towel to absorb excess moisture.
  3. In a large mixing bowl, combine cream cheese and butter. Beat until fluffy, about 2-3 minutes.
  4. Add sugar and mix until combined. Then, add in eggs one at a time, stirring in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the creamed mixture, mixing until just combined.
  6. Gently fold in the chopped strawberries into the batter.
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
