Strawberry Crunch Cheesecake

A warm and creamy cheesecake enriched with fresh strawberries and a buttery graham cracker crust.

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup fresh strawberries, chopped
  • 1 cup whipped cream
  • 1/2 cup crushed strawberries for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Center the rack for even baking.
  2. Combine the crushed graham crackers with the melted butter in a bowl. Press this mixture firmly into the bottom of a springform pan to form an even crust.
  3. Beat together the softened cream cheese and granulated sugar in a large mixing bowl until smooth.
  4. Add the vanilla extract and sour cream to the cream cheese mixture, mixing until well combined.
  5. Fold in the chopped fresh strawberries and the whipped cream, taking care not to overmix.
  6. Pour the cheesecake mixture over the prepared crust and smooth the top with a spatula.
  7. Bake for 50 to 60 minutes, until the center is set but still slightly jiggles when you gently shake the pan.
  8. Cool the cheesecake to room temperature, then refrigerate for at least 4 hours or overnight to fully set.
  9. Top the chilled cheesecake with the crushed strawberries before serving. Enjoy!

Notes

Make sure the cream cheese is fully softened and avoid overbaking to prevent cracks.
