Soft Sugar Cookies

Soft sugar cookies are a delightful treat that brings comfort and warmth with every bite, thanks to their tender, buttery texture and hint of cream cheese.

Ingredients

  • 3/4 cup salted butter (softened)
  • 4 ounces cream cheese (softened)
  • 1 and 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 3/4 teaspoons almond extract
  • 1 teaspoon salt
  • 3 cups all-purpose flour (spooned and leveled)

Instructions

  1. In a large bowl or stand mixer, beat the softened butter on medium speed until soft and fluffy, about 1 to 2 minutes.
  2. Add the softened cream cheese and continue to beat for 1 minute until well incorporated.
  3. Add the granulated sugar and beat well for another 1 to 2 minutes until fluffy and light.
  4. Mix in the egg, vanilla extract, and almond extract, scraping the sides and bottom of the bowl as needed.
  5. Add the salt and flour, then beat until just barely combined; be careful not to over-mix.
  6. Scrape the dough onto plastic wrap and chill in the fridge for 2 hours or overnight.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Roll out the chilled dough on a floured surface to about 3/8 inch thick.
  9. Cut cookies using cookie cutters and transfer to baking sheets.
  10. Bake for 9 to 11 minutes until pale and slightly golden on the bottom, then cool before decorating if desired.

Notes

Always ensure butter and cream cheese are softened for easy mixing. Store cookies in an airtight container at room temperature for up to one week.
