  • 1/2 cup Shelled Pistachios
  • 10 tablespoons Salted Butter, melted
  • 8 ounces Cream Cheese, room temperature
  • 8 ounces Whipped Topping, thawed
  • 1/2 cup White Granulated Sugar
  • 2 boxes Jello Pistachio Pudding Mix (3.4 oz each)
  • 2 1/2 cups Whole Milk
  • 8 ounces Whipped Topping, thawed
  • 1/4 cup Shelled Pistachios, roughly chopped

Instructions

  1. Prepare the crust: In a food processor, combine the graham cracker crumbs and shelled pistachios. Pulse until finely ground.
  2. Add melted butter: Pour in the melted salted butter and pulse until the mixture clumps.
  3. Form the crust: Press the mixture into a 9×13 inch dish and freeze for 20 minutes.
  4. Make the cream cheese layer: Beat cream cheese until smooth, then add whipped topping and sugar, beating until light and lump-free. Spread over the crust and refrigerate.
  5. Prepare the pudding: Whisk the pudding mix with whole milk until smooth and thickened.
  6. Layer the pudding: Spread the pudding over the cream cheese layer and smooth the top.
  7. Top with whipped topping: Spread the remaining whipped topping over the pudding.
  8. Chill: Cover and refrigerate for at least 8 hours or overnight.
  9. Garnish and serve: Sprinkle chopped pistachios over the top and cut into squares before serving chilled.

Notes

Ensure cream cheese is at room temperature for smooth mixing. For additional flavor, consider lightly toasting the pistachios.
