Pecan Cookies

Pecan Cookies are a comforting classic that blend buttery sweetness and nutty crunch in every bite.

Ingredients

  • 2 cups light or dark brown sugar, lightly packed
  • 1 cup salted butter, at room temperature
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups pecan halves

Instructions

  1. In a large mixing bowl, beat the brown sugar, butter, and vanilla until light and fluffy.
  2. Add the eggs and mix on low until combined.
  3. In a separate bowl, whisk together the flour, salt, and baking soda.
  4. Gradually add the dry mixture to the wet mixture until just incorporated.
  5. Fold in the pecans gently.
  6. Cover and refrigerate for 30 minutes.
  7. Preheat the oven to 350°F and line cookie sheets with parchment paper.
  8. Scoop dough onto sheets, spacing 3 inches apart.
  9. Bake for 8 minutes or until edges are slightly golden.
  10. Remove from oven and optionally sprinkle with sea salt. Let cool on the sheet for a few minutes, then transfer to a wire rack.

Notes

Use room temperature butter and eggs for smooth mixing and even texture. Freeze baked cookies for up to 3 months.
