No-Bake Yogurt Tart

A bright, fresh dessert featuring a chewy crust made from Medjool dates, cashews, and almonds, topped with creamy Greek yogurt and assorted fresh fruit.

  • 15 pitted Medjool dates
  • 3/4 cup unsalted cashews
  • 3/4 cup unsalted almonds
  • 1 cup Greek yogurt
  • Assorted sliced fresh fruit (optional for topping)
  • 2 Tablespoons apricot preserves (optional)
  • 1 Tablespoon water (optional)

Instructions

  1. Prepare the pan. Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray and line it with parchment paper.
  2. Soak the dates. Place the 15 pitted Medjool dates in a bowl with warm water for 10 minutes, then drain and cut each date in half.
  3. Pulse the crust mixture. In a food processor or blender, pulse the drained dates, cashews, and almonds together until a sticky dough forms.
  4. Press the crust. Press the sticky dough evenly into the prepared tart pan, forming a uniform crust.
  5. Add the yogurt layer. Spread the Greek yogurt on top of the crust in an even layer.
  6. Decorate and glaze. Arrange fresh fruit on top and, if desired, mix apricot preserves with water and brush it over the fruit.
  7. Serve or chill. Slice and serve immediately, or refrigerate for up to 1 day.

Notes

Use very soft, fresh Medjool dates for the best texture. Chill for 15 minutes before cutting for neater slices.
