Mint Chocolate Cake

A decadent dessert that combines rich chocolate flavor with refreshing mint, featuring layers of moist chocolate cake infused with mint chocolate chips and topped with luscious buttercream frosting.

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup mint chocolate chips
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until well mixed.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until combined and smooth.
  4. Stir in boiling water until the batter is well blended.
  5. Fold in mint chocolate chips.
  6. Divide the batter between prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow cakes to cool in pans for about 10 minutes before transferring to a wire rack to cool completely.
  9. For frosting, beat softened butter until creamy. Gradually add powdered sugar, heavy cream, and peppermint extract. Mix until fluffy and smooth.
  10. Frost cooled cakes as desired and decorate with additional mint chocolate chips.

Notes

Chill cakes after baking for easier frosting. Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
