Fruity Pebbles Cheesecake Tacos

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup whipped topping
  • 1 cup Fruity Pebbles cereal
  • 12 taco shells

Instructions

  1. Prepare the Taco Shells: Preheat the oven to 350°F (175°C). Bake the taco molds or stand the taco shells upright in a muffin tin for 8–10 minutes until crispy. Let them cool.
  2. Mix the Cheesecake Filling: In a mixing bowl, combine softened cream cheese and powdered sugar. Beat with an electric mixer on medium speed until smooth and creamy.
  3. Incorporate Vanilla: Add vanilla extract and mix until incorporated.
  4. Fold in Whipped Topping: Gently fold in the whipped topping until evenly blended and fluffy.
  5. Assemble the Tacos: Spoon or pipe the cheesecake filling into each cooled taco shell.
  6. Add Fruity Pebbles: Sprinkle Fruity Pebbles on top of each filled taco, pressing lightly to stick.
  7. Chill and Serve: Refrigerate for about an hour to allow flavors to meld. Serve chilled.
