  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup creamy or crunchy almond butter
  • 3 and 1/4 cups old-fashioned whole rolled oats
  • 1/3 cup ground flaxseed
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350F (177C). Prepare a muffin pan by greasing it or lining it with muffin liners to prevent sticking.
  2. In a large bowl, whisk together the milk, eggs, maple syrup, applesauce, and almond butter until they are fully combined.
  3. Stir in the rolled oats, ground flaxseed, baking powder, cinnamon, vanilla extract, and salt, mixing until everything is well incorporated.
  4. Gently fold in the chocolate chips, making sure they are evenly distributed throughout the mixture.
  5. Spoon the mixture into the muffin cups, filling each to the top for the best height and texture.
  6. Bake for about 28-30 minutes, or until the edges are lightly browned and a toothpick inserted in the center comes out clean.
  7. Allow the oatmeal cups to cool for a few minutes before enjoying. Store any leftovers in the fridge for up to a week.
