Brownie Muffins

Delightful Brownie Muffins that combine the rich, fudgy texture of a brownie with the convenience of a muffin.

  • 1 1/4 cups semi-sweet chocolate chips
  • 2/3 cup unsalted butter
  • 1/4 cup oil
  • 3 eggs (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 tbsp vanilla
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare muffin liners in a muffin tin.
  2. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl; set aside.
  3. Melt the butter in a saucepan over low heat. Once melted, remove from heat and stir in the chocolate chips until smooth.
  4. Combine the melted mixture with the sugars, oil, eggs, and vanilla in a large bowl; mix well until fully incorporated.
  5. Fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  6. Scoop the batter into the muffin liners, filling each cup about three-quarters full for optimal rising.
  7. Sprinkle extra chocolate chips on top for an even more decadent finish, if desired.
  8. Bake for 25-35 minutes until a toothpick inserted comes out with a few moist crumbs.
  9. Allow to cool slightly before serving, and enjoy your delicious Brownie Muffins!

Notes

Keep the muffins in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week. They freeze well and can be frozen for up to 3 months.
