Apple Zucchini Bread

A delightful blend of sweet apples and fresh zucchini, this Apple Zucchini Bread is moist, aromatic, and perfect for breakfast, snacks, or dessert.

  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil or avocado oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/3 cup packed light or dark brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 and 1/4 cups shredded zucchini
  • 1 heaping cup peeled and chopped apple
  • Optional: coarse sparkling sugar for topping

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a loaf pan to prevent sticking.
  2. Combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, and nutmeg in a large bowl. Whisk together until well blended.
  3. Mix together the vegetable oil (or avocado oil), unsweetened applesauce, granulated sugar, brown sugar, eggs, and vanilla extract in a separate bowl. Stir until smooth.
  4. Add the wet ingredients to the dry ingredients, stirring gently to combine. Be careful not to overmix; a few lumps are fine.
  5. Toss the peeled and chopped apples with the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon, then gently fold the apples into the batter.
  6. Spread the batter evenly into the prepared loaf pan.
  7. Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, use fresh, tender zucchini and firm apples. Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. To freeze, wrap tightly for up to 3 months.
