  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and a pinch of salt.
  3. In a large bowl, beat the softened butter with 1 1/2 cups of sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing after each addition, followed by the vanilla extract.
  5. Gradually add the dry mixture to the butter mixture and blend until just combined.
  6. In a small bowl, mix together 1/4 cup of sugar and the ground cinnamon.
  7. Scoop out dough (about 2 tablespoons) and roll into balls, then coat in the cinnamon sugar mixture.
  8. Place on a prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for about 9-11 minutes, until edges are golden and centers look underbaked. Let cool before transferring to a wire rack.

Notes

For best results, avoid overbaking. Store cookies in an airtight container for up to a week.
