Sweet Grilled Teriyaki Chicken

A tantalizing dish of marinated grilled chicken thighs in a sweet and savory teriyaki sauce, perfect for summer cookouts and family gatherings.

Ingredients

Scale
  • pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Begin by placing the chicken thighs in a large bowl or a gallon-sized Ziploc bag.
  2. In a medium bowl, create your marinade by combining the soy sauce, brown sugar, pineapple juice, chopped garlic, and minced ginger.
  3. Pour the marinade over the chicken and let it marinate in the fridge for at least 4 hours, or overnight.
  4. When you’re ready to cook, remove the chicken from the marinade while reserving the marinade for later.
  5. Preheat your grill to medium-high heat. Once it’s hot, place the marinated chicken on the grill and brush it with some of the hot marinade.
  6. Grill for about 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F.
  7. Once cooked, transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki sauce over it.

Notes

For an extra flavor boost, try adding sesame seeds or chopped green onions as a garnish before serving. Leftover grilled chicken can be stored in an airtight container in the refrigerator for up to 4 days.
