Sweet Grilled Teriyaki Chicken

A delightful recipe that combines juicy chicken thighs with a sweet and savory teriyaki marinade, perfect for summer cookouts.

  • pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Start by placing the boneless and skinless chicken thighs in either a large bowl or a gallon-sized Ziploc bag.
  2. In a medium bowl, create the marinade by mixing together the soy sauce, brown sugar, pineapple juice, chopped garlic, and minced ginger. Stir until the sugar is completely dissolved.
  3. Pour the marinade over the chicken. If using a bag, squeeze out excess air before sealing. Cover the bowl if using one. Let marinate in the refrigerator for at least 4 hours, preferably overnight.
  4. When ready to cook, remove chicken from the marinade but save it! Pour it into a saucepan and simmer over medium heat for 5-10 minutes until food-safe.
  5. Preheat your grill to medium-high heat. Brush the marinated chicken with hot marinade and grill for about 6-8 minutes on each side, until the internal temperature reaches 165°F.
  6. Once cooked, place the chicken in a baking dish and pour remaining hot teriyaki sauce over it. Serve immediately.

Notes

For an extra layer of flavor, consider adding sesame seeds or green onions as a garnish before serving. Store leftovers in an airtight container for up to 3-4 days.
