Warm and Flavorful Slow Cooker Pot Roast

A comforting slow cooker pot roast with tender beef, carrots, potatoes, and aromatic garlic, perfect for family gatherings.

Ingredients

  • 34 lb chuck roast
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 2 onions, sliced
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Season and sear the beef with salt and pepper in a hot skillet until browned on all sides (3-4 minutes per side).
  2. Prepare the vegetables: Place the chopped carrots, quartered potatoes, and sliced onions at the bottom of the slow cooker.
  3. Add the seared roast on top of the vegetables.
  4. Pour beef broth around the roast and add minced garlic, Worcestershire sauce, and thyme.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Check for doneness; the roast should be fork-tender and reach an internal temperature of at least 195°F.
