Shoofly Pie

A cozy classic pie with deep molasses sweetness, a tender crumb topping, and warm cinnamon and nutmeg flavors.

  • 1 (9-inch) refrigerated pie crust
  • 1 cup molasses
  • 3/4 cup boiling water
  • 1 large egg (room temperature)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar (packed)
  • 1/2 cup salted butter (softened)
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400 degrees F and prepare the crust.
  2. Mix the molasses with the boiling water until combined and smooth.
  3. Beat the room temperature egg and stir it into the molasses mixture.
  4. Add the baking soda, salt, cinnamon, and nutmeg, and mix well.
  5. Pour this filling into the prepared pie crust.
  6. Combine the flour and dark brown sugar for the crumb topping.
  7. Work the softened butter into the mixture until crumbly.
  8. Sprinkle the crumb mixture evenly over the molasses filling.
  9. Reduce the oven temperature to 350 degrees F and bake for 40 minutes.
  10. Remove from the oven and let it rest for 15 minutes before serving.

Notes

Use a chilled pie crust to minimize shrinkage. Rest the pie before slicing for clean cuts.
