Salted Caramel Cheesecake Cookies

Delicious cookies that combine rich salted caramel and creamy cheesecake into a delightful treat perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup caramel sauce
  • Sea salt flakes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate mixing bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and light.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. In another bowl, beat the cream cheese until fluffy, then mix in the caramel sauce until smooth.
  7. Using a cookie scoop, place a tablespoon of cookie dough on your baking sheet, add a teaspoon of cheesecake filling in the center, and cover with another tablespoon of cookie dough. Sprinkle with sea salt flakes.
  8. Bake for 12–15 minutes, until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week.
