Salted Caramel Cheesecake Cookies

Delight in these chewy cookies infused with rich brown sugar and cream cheese, topped with a luscious salted caramel drizzle.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture until just combined.
  5. Beat the cream cheese and powdered sugar together in another bowl until smooth and creamy.
  6. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them 2 inches apart. Create a small indentation in each cookie with your thumb.
  7. Fill the indentation of each cookie with a spoonful of the cream cheese mixture.
  8. Drizzle the salted caramel sauce over each cookie.
  9. Bake for 12-15 minutes, or until the edges are golden brown. Cool on a wire rack before serving.

Notes

For a twist, consider adding chocolate chips or chopped nuts to the dough.
