Rocky Road Fudge

Warm, chocolatey, and joyfully nostalgic, this Rocky Road Fudge is a simple no-bake treat that satisfies every dessert craving with its rich chocolate base and delightful mix of marshmallows and peanuts.

  • 3 cups semi-sweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 4 tablespoons butter, cubed
  • 1 teaspoon vanilla extract
  • 3 cups mini marshmallows plus a few extra
  • 1 cup salted peanuts plus a few extra

Instructions

  1. Line a 9×13 inch dish with foil and spray with nonstick cooking spray.
  2. Combine the semi-sweet chocolate chips, sweetened condensed milk, and cubed butter in a medium saucepan over medium heat. Stir constantly until smooth.
  3. Remove from heat and stir in the salted peanuts and vanilla extract until evenly distributed.
  4. Pour the chocolate mixture over the mini marshmallows in a large bowl, mixing well to combine.
  5. Spread the mixture evenly into the prepared pan and sprinkle additional peanuts and marshmallows on top, pressing gently.
  6. Refrigerate until firm, about 120 to 180 minutes. For best results, chill overnight.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. Fudge can be frozen for up to 3 months.
