Rice Krispie Treats

Warm, nostalgic, and impossibly simple, these Rice Krispie Treats are a go-to for parties, lunchboxes, or a cozy snack at home.

  • 3/4 cup unsalted butter
  • Two 10-ounce bags mini marshmallows (total of 20 ounces)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • 9 cups crispy rice cereal

Instructions

  1. Prepare the pan. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. Melt the butter. In a large pot, melt the unsalted butter over medium heat, watching carefully to prevent browning.
  3. Add marshmallows. Once the butter is melted, stir in the mini marshmallows until completely melted and smooth.
  4. Remove from heat and flavor. Stir in the vanilla extract and a pinch of salt until combined.
  5. Fold in cereal. Add the crispy rice cereal and gently fold until evenly coated with the marshmallow mixture.
  6. Transfer and press. Spread the mixture into the prepared pan and press down lightly with a greased spatula.
  7. Set and cut. Allow them to set at room temperature for at least 1 hour, then cut into squares.

Notes

Use medium heat when melting butter and stir constantly to prevent burning. Store cooled squares in an airtight container for up to 3 days.
