Pecan Pie Bites

Delightful bite-sized treats combining a buttery crust with a rich pecan filling, perfect for gatherings and cozy desserts.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin to prevent sticking.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the flour mixture into the bottom of each muffin cup to form a crust, making sure it is evenly distributed.
  4. In another bowl, combine the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
  5. Pour the pecan filling into each crust until full, but be careful not to overfill to prevent spilling during baking.
  6. Bake for 15-20 minutes, or until the filling is set and lightly browned.
  7. Let cool slightly before removing the bites from the tin. Serve warm or at room temperature.

Notes

For a finer texture, chop the pecans more finely or use a food processor. Store any leftovers in an airtight container in the refrigerator for up to 4 days. These bites freeze well.
