Ingredients

Scale
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¾ cup pecans, finely chopped
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Position a rack in the center of the oven for even baking.
  2. Cream together the softened butter and powdered sugar until well combined and fluffy.
  3. Add the all-purpose flour, kosher salt, and vanilla extract to the mixture and mix until combined.
  4. Stir in the finely chopped pecans until evenly distributed through the dough.
  5. Using a 2-tablespoon cookie scoop, place rounded portions of dough on a lined baking sheet, spacing about 2 inches apart.
  6. Dampen a paper towel and press a flat-bottomed glass dipped in granulated sugar onto each cookie.
  7. Bake for 11 to 13 minutes or until the edges are lightly browned.
  8. Allow the cookies to cool completely on the baking sheet before serving.
  9. Optional: sprinkle with powdered sugar for added sweetness.

Notes

To avoid overbaking, check cookies at the 11-minute mark. For firmer shapes, chill the dough briefly.
