Peanut Butter Chocolate Chip Zucchini Bread

  • 1 teaspoon baking powder

  • 1/2 cup creamy peanut butter
  • 2/3 cup packed light or dark brown sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1/3 cup milk (any kind)
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. Whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon in a large bowl.
  3. Mix the vegetable oil, creamy peanut butter, brown sugar, honey, eggs, milk, and vanilla extract in another bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients gently until just incorporated.
  5. Fold in the shredded zucchini and chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 70 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes then transfer to a wire rack.

Notes

Store leftover bread in an airtight container at room temperature for up to 3 days. For longer storage, freeze slices wrapped tightly.
