No-Bake Peanut Butter Oatmeal Cookies

These chewy no-bake cookies are quick, comforting treats with rich chocolate, creamy peanut butter, and hearty oats, perfect for snacking or sharing.

  • 1/4 cup unsalted butter
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 2/3 cup creamy peanut butter
  • 1 tablespoon pure vanilla extract
  • 3 cups old-fashioned rolled oats or quick oats
  • 1/8 teaspoon salt

Instructions

  1. Prepare your workspace and ingredients so everything is within reach. Line baking sheets with parchment paper and measure the oats and peanut butter.
  2. Add the butter, sugar, milk, and cocoa powder to a medium saucepan over medium heat. Stir to combine.
  3. Whisk constantly until the butter melts and the mixture is smooth.
  4. Bring the mixture to a boil and let it boil for 1 minute.
  5. Remove the pan from heat and immediately stir in the peanut butter and vanilla extract until well combined.
  6. Fold in the oats and salt and let the mixture sit for 5 minutes to thicken.
  7. Scoop the mixture onto the prepared sheets, spacing cookies about an inch apart.
  8. Chill in the refrigerator for 30 to 60 minutes until firm.

Notes

For a firmer cookie, let them chill on a metal sheet pan. Store in an airtight container in the refrigerator for up to 1 week.
