No Bake Chocolate Oatmeal Bars

Satisfying no bake chocolate oatmeal bars combining rich flavors of dark chocolate and creamy peanut butter for a delicious treat.

  • 1 cup butter (melted)
  • 1/2 cup light brown sugar (packed)
  • 2 tsp vanilla (optional)
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter (creamy)

Instructions

  1. Begin by lining an 8×8-inch baking dish with parchment paper to prevent sticking and assist in easy removal.
  2. Combine the semi-sweet chocolate chips and peanut butter in a medium bowl. Melt them together in the microwave or on the stovetop over low heat, stirring until smooth. Set aside to cool for a few minutes.
  3. Melt the butter and brown sugar together in a large saucepan over medium heat, stirring continuously until fully combined.
  4. Stir in the vanilla extract if using, then add the quick oats to the butter and sugar mixture. Cook for 2-3 minutes, stirring frequently.
  5. Press half of the oatmeal mixture into the bottom of the prepared baking dish, spreading it evenly.
  6. Pour the melted chocolate and peanut butter mixture over the pressed oatmeal layer, spreading it out gently.
  7. Sprinkle the remaining oatmeal mixture on top of the chocolate layer and lightly press down to create an even surface.
  8. Refrigerate the bars for at least 2 hours or until firm before cutting and serving.

Notes

Ensure you melt the chocolate and peanut butter gently to avoid burning. Store in an airtight container in the refrigerator for up to 1 week.
