Mozzarella Garlic Butter Chicken Bowties in Cheesy Cream

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 lb bowtie pasta (farfalle)
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese, divided
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 1/4 cup milk
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry and season both sides with olive oil, Cajun seasoning, salt, smoked paprika, and black pepper.
  2. Heat a large skillet over medium heat and cook the chicken until golden brown, about 6 to 8 minutes. Transfer to a plate and let it rest.
  3. Cook the bowtie pasta in salted boiling water according to package instructions until al dente, then drain.
  4. Melt butter in the skillet, add minced garlic, and sauté until fragrant.
  5. Whisk together flour and milk to create a slurry, then add to the skillet and stir to thicken.
  6. Pour in chicken broth and heavy cream, and bring to a gentle simmer.
  7. Stir in cream cheese and mozzarella until melted and smooth, adjust seasoning as necessary.
  8. Combine chicken and pasta with the sauce, tossing to coat.
  9. Broil in an ovenproof dish until cheese is bubbly and browned, about 2 to 4 minutes.
  10. Rest for a few minutes before serving and garnish with red pepper flakes if desired.

Notes

Let the cooked chicken rest before slicing to retain juices. Store leftovers in an airtight container for up to 3 days. This dish can be frozen before broiling.
