Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup evaporated milk
  • 1/2 cup butter
  • 1 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Whisk until well combined.
  3. In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until fully incorporated.
  5. Carefully stir in the boiling water; the batter will be thin.
  6. Divide the batter between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. For the frosting, combine evaporated milk, butter, brown sugar, coconut, and pecans in a saucepan over medium heat. Cook until the mixture thickens.
  8. Once the cakes are cool, layer them with frosting and enjoy!

Notes

Ensure eggs and milk are at room temperature for a smoother batter. Keep the cake airtight to maintain freshness.
