Meringue Roulade

An elegant dessert that combines crisp meringue with a silky cream filling, perfect for special occasions.

Ingredients

  • 5 egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 tablespoon granulated sugar for sprinkling
  • 1/2 teaspoon cream of tartar
  • 1 and 1/2 teaspoons cornstarch
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • Pinch of salt
  • Confectioners’ sugar for dusting
  • 1 cup heavy cream, cold
  • 1/3 cup confectioners’ sugar
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 4 ounces full-fat cream cheese, softened to room temperature
  • Optional: lemon curd and/or jam
  • Optional garnishes: homemade whipped cream, fresh fruit, crushed pistachios

Instructions

  1. Preheat the oven to 300°F (149°C). Position a rack in the center of the oven.
  2. Process the granulated sugar until superfine.
  3. In a completely grease-free bowl, whip the egg whites until soft peaks form.
  4. Gradually add the superfine sugar to the whipped egg whites while continuing to whip.
  5. Add the cream of tartar and continue beating until stiff peaks form.
  6. Gently fold in the cornstarch, vanilla, and a pinch of salt.
  7. Spread a little meringue in the corners of a jelly roll pan to help the parchment stick.
  8. Spread the meringue evenly on the sugared parchment paper.
  9. Bake for 25 to 30 minutes until the meringue is set and slightly golden.
  10. Cool for 10 minutes in the pan.
  11. While the meringue is warm, roll it up in the sugared towel starting from one short end.
  12. For the filling, whip the cold heavy cream with the confectioners’ sugar and vanilla until soft peaks form.
  13. Beat the softened cream cheese until smooth in a separate bowl.
  14. Unroll the cooled meringue carefully and spread the cream filling evenly.
  15. Roll the meringue back up gently but firmly.
  16. Garnish with homemade whipped cream, fresh fruit, and crushed pistachios before serving.

Notes

Ensure bowls and beaters are completely grease-free for best volume. Store in the refrigerator for up to 48 hours.
