Matilda’s Chocolate Cake

A rich and moist chocolate cake perfect for family gatherings and celebrations.

Ingredients

  • 2 cups All-Purpose Flour (or almond flour for gluten-free)
  • 1 ¾ cups Granulated Sugar
  • ¾ cup Cocoa Powder (preferably Dutch-process)
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 2 Eggs (or flax eggs for vegan)
  • 1 cup Whole Milk (or dairy-free milk)
  • ½ cup Vegetable Oil (or coconut oil)
  • 2 tsp Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. Frost with chocolate frosting once cooled.

Notes

For a vegan alternative, use flax eggs and dairy-free milk. Add chocolate chips or nuts for extra texture.
