Mandarin Orange Cake with Pineapple Frosting

A delightful dessert that combines sweet mandarin oranges with luscious pineapple frosting, perfect for celebrations and gatherings.

  • 1 (15 ounces) yellow cake mix
  • 1 (14 ounces) canned mandarin oranges
  • ½ cup reserved mandarin orange juice
  • 4 large eggs
  • ¼ cup vegetable oil
  • 1 (15 ounces) canned crushed pineapple
  • 3.5 ounces instant vanilla pudding mix
  • 1 (16 ounces) whipped topping, thawed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans thoroughly.
  2. Combine the yellow cake mix, drained mandarin oranges, reserved mandarin orange juice, eggs, and vegetable oil in a large mixing bowl. Mix on medium speed until smooth.
  3. Divide the batter evenly between the prepared pans.
  4. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. Mix the drained crushed pineapple and instant vanilla pudding mix in a medium bowl.
  7. Fold in the thawed whipped topping until creamy and well incorporated.
  8. Spread a layer of frosting on one cake layer, place the second layer on top, and frost the top and sides. Decorate with additional frosting and mandarin orange slices if desired.

Notes

Make sure the eggs are at room temperature for better mixing. Store leftover cake in an airtight container in the refrigerator for up to 5 days.
