Kielbasa Gnocchi Skillet

A delicious one-pan meal combining crispy kielbasa with tender gnocchi and vibrant veggies, perfect for busy weeknights.

Ingredients

  • 1 lb. kielbasa sausage (sliced)
  • 1 lb. gnocchi (fresh or frozen)
  • 1 cup bell pepper (diced)
  • 1 cup spinach
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon Italian seasoning
  • 1 cup chicken or vegetable broth

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add sliced kielbasa and cook for 5-7 minutes until browned.
  3. Toss in minced garlic and diced bell pepper; cook for 3-4 minutes.
  4. Add gnocchi and stir to combine.
  5. Pour in 1 cup of broth, cover, and simmer for 5-7 minutes.
  6. Fold in fresh spinach, season with salt, pepper, and Italian seasoning, and cook for another 2-3 minutes.
  7. Serve warm and enjoy!

Feel free to swap kielbasa for turkey or plant-based sausage for a healthier version.
