Honey Lime Chicken Avocado Rice

Indulge in a refreshing meal with tender chicken marinated in honey and lime, perfectly grilled and served on a fluffy avocado rice bed.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup white or brown rice
  • 2 cups water or chicken broth
  • 1 tablespoon olive oil (for rice)
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon lime zest
  • Salt and pepper, to taste (for rice)
  • 1/2 cup sour cream (optional)
  • Lime wedges (optional)

Instructions

  1. Whisk together honey, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper in a small bowl.
  2. Place chicken breasts in a resealable bag, pour marinade over, and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and discard excess; grill for 6-7 minutes per side until cooked through.
  5. Let the chicken rest for 5 minutes before slicing.
  6. Cook rice according to package instructions with water or chicken broth.
  7. Fluff rice and stir in olive oil, avocado, cilantro, lime zest, and season with salt and pepper.
  8. Layer avocado rice in serving dishes and top with sliced chicken.
  9. Drizzle with sour cream if desired, and garnish with lime wedges.

Notes

For an extra kick, add cayenne pepper to the marinade. This dish can be prepped in advance, and any leftovers can be stored in the refrigerator for up to 3 days.
