  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1/2 cup powdered sugar (for frosting)
  • 1 cup Irish cream liqueur (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a cake pan.
  2. In a large bowl, whisk together the Guinness beer and melted butter until combined. Stir in the granulated sugar, eggs, and sour cream until smooth.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually incorporate this dry mixture into the wet ingredients.
  4. Pour the batter into the prepared cake pan and bake for 30-35 minutes, until a toothpick inserted comes out clean.
  5. Allow the cake to cool for 10 minutes before transferring to a wire rack to cool completely.
  6. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar, mixing until fluffy. Mix in the Irish cream and heavy cream until smooth.
  7. Once the cake is completely cooled, frost generously with the Irish buttercream. Slice, serve, and enjoy!
