Guinness Brownies with Guinness Frosting

Rich, fudgy brownies infused with Guinness and topped with a silky Guinness frosting, perfect for indulgent occasions.

  • 1 (11.2–12-ounce) bottle Guinness Draught Stout
  • 3/4 cup unsalted butter
  • 2 (4-ounce) bars semi-sweet chocolate, coarsely chopped
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon espresso powder (optional)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups confectioners’ sugar
  • 23 tablespoons reduced Guinness (for frosting)
  • 1 teaspoon espresso powder (for frosting)
  • 1/2 teaspoon pure vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)

Instructions

  1. Reduce the Guinness in a small saucepan over medium-high heat until it reduces to 2/3 cup, about 12 to 15 minutes. Let cool.
  2. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  3. Melt the butter and chocolate together in a microwave-safe bowl until smooth.
  4. Mix the melted mixture with sugar and reduced Guinness until combined.
  5. Add the eggs one at a time and vanilla extract, whisk until smooth.
  6. Combine the flour, salt, and optional espresso powder gently until just mixed.
  7. Bake for 32 to 35 minutes or until a toothpick comes out with moist crumbs.
  8. Cool the brownies completely in the pan.
  9. Make the frosting by beating softened butter, then gradually add confectioners’ sugar, reduced Guinness, and other frosting ingredients until combined.
  10. Frost the cooled brownies and cut into squares.

Notes

For fudgier brownies, avoid overbaking and use room temperature eggs for better mixing.
