Guinness Brownies with Frosting

Rich, fudgy brownies enhanced by the deep flavors of Guinness stout and topped with a silky buttercream frosting.

  • 11.2 to 12-ounce bottle Guinness Draught Stout (for reducing)
  • 3/4 cup unsalted butter
  • 8 ounces semi-sweet chocolate, coarsely chopped
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon espresso powder (optional)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups confectioners’ sugar
  • 2 to 3 tablespoons reduced Guinness (for frosting)
  • 1 teaspoon espresso powder (for frosting)
  • 1/2 teaspoon pure vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)

Instructions

  1. Reduce the Guinness by simmering in a saucepan until reduced to 2/3 cup.
  2. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  3. Melt the butter and chocolate in a microwave-safe bowl.
  4. Combine the sugar with the melted chocolate and half of the reduced Guinness.
  5. Add the eggs and vanilla extract to the mixture until glossy.
  6. Fold in the flour, salt, and optional espresso powder.
  7. Bake in the oven for 32 minutes and check doneness with a toothpick.
  8. Cool completely on a wire rack before frosting.
  9. Make the frosting by beating the softened butter, adding sugar, reduced Guinness, espresso powder, vanilla extract, and salt until smooth.
  10. Frost the cooled brownies and cut into squares.

Notes

Allow the reduced Guinness to cool slightly before adding to the chocolate. Store frosted brownies in an airtight container at room temperature for up to 1 week.
