  • ½ cup buttermilk

  • 1 cup brown sugar, packed

  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract (for caramel)
  • Pinch of salt (for caramel)
  • 2 tablespoons brewed coffee (for caramel)
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, beat the softened butter and egg together until light and fluffy. Then, mix in the cooled coffee, buttermilk, and vanilla extract.
  4. Gradually add the dry mixture to the wet mixture, stirring until the batter is smooth and well combined.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. For the caramel sauce, combine the brown sugar, ½ cup of butter, and heavy cream in a saucepan over medium heat. Stir until the mixture begins to simmer, then cook for 3-4 minutes until thickened.
  7. Remove the caramel sauce from heat and stir in the vanilla extract, pinch of salt, and brewed coffee.
  8. Once the cake is completely cooled, drizzle the warm caramel sauce over the top and dust with powdered sugar before serving.
