Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken breasts, trimmed and patted dry
  • 1/2 cup white wine or chicken broth
  • 3 tablespoons unsalted butter
  • 1 to 2 teaspoons 21 Salute Seasoning or poultry seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 2 teaspoons fresh parsley, finely chopped

Instructions

  1. Warm a spacious skillet with 3 tablespoons olive oil over medium-high temperature until the surface shimmers.
  2. Coat the chicken breasts with 1 to 2 teaspoons 21 Salute Seasoning or poultry seasoning in a shallow dish.
  3. Place the seasoned chicken into the hot oil and sear without moving for 5 to 6 minutes per side, until golden-brown.
  4. Remove the pan from heat briefly and pour in 1/2 cup white wine or chicken broth to deglaze the pan.
  5. Lower heat to medium-low and add 3 tablespoons unsalted butter and 1 tablespoon garlic, minced.
  6. Return the chicken to the pan if removed and allow to cook through, about 2 to 3 minutes.
  7. Optionally sprinkle 2 teaspoons fresh parsley over the chicken before serving.
  8. Serve chicken with the pan sauce drizzled on top.

Notes

Pat chicken dry before cooking for an even sear. Refrigerate leftovers in an airtight container up to 4 days.
