  • to 2 pounds boneless chicken thighs or chicken breast, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes, optional, for heat
  • ½ tsp salt, adjust to taste
  • ¼ tsp black pepper, or more for bolder flavor
  • 45 cloves garlic, minced
  • 23 tbsp parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp hot sauce, for extra kick
  • ½ cup chicken broth, for a thinner sauce
  • lemon wedges, for fresh flavor
  • Parmesan cheese, optional, for creamy finish

Instructions

  1. Cut the chicken into bite-sized pieces and pat dry with paper towels.
  2. In a bowl, season the chicken with garlic powder, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes if using. Toss to coat evenly.
  3. Heat a skillet over medium-high heat and add 1 tbsp olive oil. Cook the chicken in a single layer for 4 to 5 minutes until golden brown. Flip and cook for another 4 to 5 minutes until fully cooked and reaches 165°F. Set the chicken aside on a plate.
  4. In the same skillet, add butter and the remaining olive oil. Melt the butter, then add minced garlic and sauté for 30 seconds until fragrant.
  5. Add chicken broth and let it simmer for 1 to 2 minutes to reduce slightly.
  6. Return the cooked chicken to the skillet, toss with the garlic butter sauce, and stir in parsley and hot sauce if using.
  7. Finish with a squeeze of lemon juice and a sprinkle of Parmesan cheese if desired. Serve warm.

Notes

Use a heavy skillet for even browning, and let the chicken sit undisturbed for the first few minutes to form a golden crust. Store cooled chicken bites in an airtight container in the refrigerator for up to 3 days.
