Garlic Butter Chicken Bites

Warm, garlicky, and dangerously easy, these Garlic Butter Chicken Bites are perfect for a weeknight meal or as an appetizer for gatherings.

  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat a large skillet over medium-high heat. Cut the chicken breasts into bite-sized pieces and pat them dry. Season the pieces evenly with salt, pepper, paprika, thyme, and parsley.
  2. Add the olive oil to the hot skillet and arrange the chicken pieces in a single layer. Cook for 6 to 7 minutes without crowding the pan, turning as needed, until the pieces are golden brown.
  3. Remove the chicken to a plate and set aside. Reduce the heat to medium, add the butter to the same skillet and let it melt, then add the minced garlic and cook for 1 to 2 minutes until fragrant. Do not let the garlic brown.
  4. Return the chicken to the skillet and toss gently to coat every piece in the garlic butter sauce. Sprinkle the grated Parmesan cheese over the chicken and stir until the cheese melts into the sauce and becomes glossy.
  5. Taste and adjust seasoning as needed, then serve hot. Garnish with extra parsley or more Parmesan if desired.

Notes

Use a heavy skillet for even heat and make sure the pan is hot before adding the chicken for the best sear. Cool completely, then store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat to preserve juiciness.
