Fruity Pebbles Cheesecake Tacos

A whimsical dessert featuring creamy cheesecake filling in crunchy cereal taco shells, perfect for any occasion.

  • 3 cups fruity cereal
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 cup whipped cream
  • Additional fruity cereal for topping

Instructions

  1. In a mixing bowl, combine the fruity cereal and melted butter. Stir thoroughly until every piece is evenly coated.
  2. Press the cereal mixture firmly into small taco-shaped molds or muffin tins.
  3. Chill the molds in the refrigerator for at least 30 minutes.
  4. Beat the cream cheese in a bowl until light and fluffy.
  5. Gradually add the sifted powdered sugar and vanilla extract, blending until smooth.
  6. Gently fold the whipped cream into the cream cheese mixture until just incorporated.
  7. Once the cereal shells are firm, remove them from the molds and spoon the cheesecake filling into each shell generously.
  8. Sprinkle additional fruity cereal over the filled tacos and serve immediately or chill for a firmer texture.

Notes

Make sure to press the cereal mixture tightly into the molds for sturdy taco shells. The shells are best enjoyed fresh.
