Frosted Red Velvet Cupcake Cookies

A delightful fusion of a cupcake and cookie, rich in flavor and adorned with creamy frosting.

  • 1 cup granulated sugar
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs, food coloring, and vanilla extract to the butter-sugar mixture and beat until fully incorporated.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  6. Drop rounded portions of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, until the edges are set but the centers remain soft.
  8. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
