French Onion Chicken Orzo Casserole

A comforting casserole that blends French onion soup flavors with tender chicken and orzo pasta, topped with a golden cheese crust.

  • 2 cups of diced onions (sweet or yellow)
  • 1 pound of boneless, skinless chicken breasts
  • 1 cup of orzo pasta
  • 4 cups of chicken broth
  • 1 cup of shredded Gruyère cheese
  • 1 cup of sour cream
  • 1 teaspoon of garlic powder
  • ½ teaspoon of thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add diced onions and sauté for 15-20 minutes until caramelized.
  3. Push onions to one side and add chicken breasts. Season with salt, pepper, thyme, and garlic powder. Sear for 3-5 minutes on each side until golden.
  4. Pour in chicken broth and add orzo pasta. Stir and let simmer for 5 minutes.
  5. Mix in sour cream and half of the shredded cheese.
  6. Transfer skillet to the oven and bake uncovered for 20-25 minutes until the orzo is tender and chicken is cooked through.
  7. Sprinkle remaining cheese and let it rest for 5 minutes before serving.
