Freeze-Dried Raspberry Sugar Cookies

These cookies are bright, tender, and packed with real raspberry flavor, featuring crisp edges and a soft, chewy center.

  • 2 cups freeze-dried raspberries, processed into a powder
  • 3 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened to room temperature
  • 4 ounces full-fat brick cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract (optional)
  • 4-ounce bar semi-sweet and/or white chocolate, coarsely chopped (optional)
  • Extra freeze-dried raspberry powder, for garnish (optional)

Instructions

  1. Process the freeze-dried raspberries into a powder using a blender or food processor.
  2. Whisk together the raspberry powder, all-purpose flour, baking powder, and salt in a large bowl.
  3. Beat the softened butter and cream cheese until smooth in another large bowl.
  4. Add granulated sugar and beat until light and fluffy, about 2 to 3 minutes.
  5. Add the egg, vanilla extract, and almond extract (if using) to the butter mixture and mix until fully incorporated.
  6. Gradually add the dry flour mixture to the wet ingredients and mix until just combined.
  7. Divide the dough into two pieces and roll each piece out to a 1/4-inch thickness on floured parchment paper.
  8. Refrigerate the rolled dough for at least 120 minutes to firm up.
  9. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  10. Cut the chilled dough into shapes using cookie cutters and place them on the prepared baking sheets.
  11. Bake for 12 to 13 minutes or until lightly browned around the edges.
  12. Allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  13. Melt the chopped chocolate and dip or drizzle it over the cooled cookies.

Notes

Store cooled cookies in an airtight container at room temperature for up to 4 days. Freeze undecorated cookies for up to 3 months.
