Forgotten Chicken and Rice

A comforting one-dish meal that combines tender rice baked in a creamy broth with juicy chicken on top, perfect for busy weeknights and potlucks.

Ingredients

  • 2 cups regular long-grain white rice
  • 3 cups chicken broth
  • 1 cup water
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rice, chicken broth, water, cream of chicken soup, garlic powder, onion powder, black pepper, and dried parsley in a large baking dish.
  3. Mix well so the soup and seasonings coat the rice evenly.
  4. Place chicken pieces on top of the rice mixture in a single layer.
  5. Cover the dish securely with foil and bake for about 60 minutes.
  6. Remove the foil and bake for an additional 15 to 20 minutes until the chicken is cooked through and the rice is tender.
  7. Serve warm by spooning rice onto plates and placing chicken on top.

Notes

Use a baking dish large enough for the rice to spread evenly. If the rice looks dry after removing the foil, add a few tablespoons of warm broth and cover again briefly. Store leftovers in the fridge for up to 3 days.
