Fig Oat Bars

These Fig Oat Bars are a warm, wholesome treat that combines chewy fig filling with a tender, oat-packed crust. Perfect for lunchboxes or a sweet snack.

  • 1 and 1/2 cups chopped dried figs, stems removed
  • 1/2 cup water
  • 2 tablespoons orange juice
  • 1 teaspoon pure vanilla extract
  • 1/3 cup coconut oil, melted (or melted butter)
  • 1/4 cup pure maple syrup
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 and 2/3 cups old-fashioned whole rolled oats (or quick oats)
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C). Line an 8-inch or 9-inch square baking pan with parchment paper.
  2. Combine the chopped dried figs, water, and orange juice in a medium saucepan over medium heat and cook for 5 to 8 minutes until soft.
  3. Stir in the vanilla extract and puree the mixture until smooth.
  4. Whisk together the melted coconut oil, maple syrup, brown sugar, and egg until smooth.
  5. Add the oats, flour, baking powder, cinnamon, nutmeg, and salt, stirring until combined.
  6. Press a little over 1 and 1/2 cups of the oat mixture into the bottom of the lined pan for the crust.
  7. Spread the fig filling over the crust, leaving a small border.
  8. Top with the remaining oat mixture and gently press down.
  9. Bake for 25 to 30 minutes until the top is lightly browned.
  10. Cool completely in the pan before lifting out and cutting into squares.

Notes

Let the bars cool completely before slicing to prevent the filling from squeezing out. Store in an airtight container at room temperature for up to 3 days.
