Death by Chocolate Cake

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup dark chocolate chips
  • 1/2 cup unsalted butter (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the dry ingredients: all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well blended.
  4. Carefully stir in the boiling water; the batter will be thin, but this is normal.
  5. Pour the batter evenly into the prepared pans.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then carefully remove them to a wire rack to cool completely.
  8. For the frosting, melt the dark chocolate and set it aside to cool slightly. In a bowl, beat the unsalted butter until creamy, then gradually add the powdered sugar and cocoa, mixing until combined.
  9. Add the heavy cream and vanilla extract to the frosting mixture and mix until smooth. Stir in the melted chocolate.
  10. Once the cakes are completely cool, spread the frosting between the layers and generously over the top and sides of the cake.
  11. Slice, serve, and enjoy every decadent bite of your rich chocolate cake.

Notes

To keep your cake moist, cover it tightly in plastic wrap or store it in an airtight container. Leftover cake can be frozen for up to three months.
