Crockpot Chicken & Stuffing Casserole

Warm, creamy, and completely comforting, this casserole with tender chicken, mixed vegetables, and a savory stuffing top will bring everyone to the table.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (6 oz) box chicken stuffing mix
  • 1 bag frozen mixed vegetables (1216 oz)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 1/2 tsp Kinder’s Buttery Garlic & Herb seasoning
  • 2 cups chicken broth, divided
  • 1/2 tsp black pepper

Instructions

  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
  2. In a mixing bowl, combine the cream of chicken soup, sour cream, 1 cup chicken broth, and Kinder’s Buttery Garlic & Herb seasoning. Whisk until smooth.
  3. Pour the mixture over the chicken in the crockpot, covering the tops of the breasts.
  4. Add the frozen mixed vegetables on top, spreading them into an even layer.
  5. Sprinkle the chicken stuffing mix over the vegetables evenly.
  6. Pour the remaining chicken broth (1 cup) over the stuffing mix.
  7. Cover and cook on low for 6 to 8 hours or on high for 4 hours.
  8. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and let it melt.
  9. Serve and enjoy.

Notes

For evenly cooked chicken, choose similar-sized pieces and avoid lifting the lid during cooking.
