  • 65 grams all-purpose flour
  • 2 large eggs, beaten
  • 60 grams panko breadcrumbs
  • 50 grams grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 220°C (428°F).
  2. Prepare the baking sheet by lining it with parchment paper and misting with olive oil.
  3. Set up the dredging station with three shallow bowls: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
  4. Dredge each zucchini piece in flour, dip it in the beaten eggs, and coat it thoroughly with the breadcrumb mixture.
  5. Arrange the coated zucchini fries on the baking sheet in a single layer and lightly spray the tops with olive oil.
  6. Bake for 20 to 25 minutes, turning halfway through, until golden and crispy.
