Creamy Garlic Butter Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 4 tablespoons butter (divided)
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup all-purpose flour (optional, for dredging)

Instructions

  1. Season the chicken with salt and pepper on both sides. Dredge in flour if desired.
  2. Heat the olive oil and half the butter in a skillet over medium-high heat. Add the chicken and sear until golden and cooked through, about 5 to 6 minutes per side. Remove the chicken and set aside.
  3. Lower the heat and add the remaining butter and the minced garlic to the skillet. Sauté until fragrant, about 30 seconds.
  4. Add the chicken broth and scrape the browned bits from the pan. Let the broth simmer for 2 to 3 minutes.
  5. Pour in the heavy cream and simmer until the sauce thickens, about 3 to 4 minutes.
  6. Return the chicken to the skillet and spoon sauce over the top. Cook for 2 more minutes.
  7. Garnish with chopped parsley and serve immediately.

Notes

Pat chicken dry before seasoning for a better sear. Refrigerate leftovers in an airtight container for up to 3 days. This dish can be frozen for up to 2 months.
